greenbox Recipe: Oven-Baked Pumpkin
From our E-Commerce Manager, Anna - perfect as a main course or as a side dish!
- 1 Hokkaido pumpkin
- 3 shallots
- 1 bunch of flat-leaf parsley
- 5 tablespoons of olive oil
- 80 g shaved Parmesan
- Salt and pepper
Wash the Hokkaido, remove the seeds, and carefully slice it. Lay the pumpkin slices on a baking sheet and generously brush with olive oil. Wash the parsley, chop roughly, and spread it over the pumpkin. Sprinkle Parmesan on top and season with salt and pepper to taste. Then bake for 25 minutes at 200° C (392° F, using both top and bottom heat). If you prefer it a bit firmer, you can take the pumpkin out of the oven earlier. Enjoy your meal!
